INGREDIENTS
- 1 small orange or purple cauliflower approx. 500 g
- 3 teaspoons Za'atar spice
- 2 teaspoons Tahini paste
- 2 tablespoons lemon juice
- 2 tablespoons chopped flat-leaf parsley
- 2 tablespoons chopped chives
- 1 clove of garlic
- Salt
- Olive oil
YOU WILL ALSO NEED
- Baking paper
- Aluminum foil
INSTRUCTIONS
- 1Preheat the oven to 180 degrees Celsius - top and bottom heat. Clean the cauliflower from the outer leaves and trim the stem. Place the cauliflower in a baking dish lined with baking paper.
- 2Brush with olive oil, sprinkle with spices, and salt. Add about 100 ml of water, cover with aluminum foil, and bake for 30 - 35 minutes. Then uncover the foil, brush again with olive oil, and bake uncovered for another 5 minutes.
- 3For the dressing, mix tahini paste, lemon juice, 4 tablespoons of water, 2 tablespoons of olive oil, crushed garlic, and salt.
- 4Serve the roasted cauliflower sprinkled with fresh herbs and drizzled with tahini dressing.
