4 BAKING DISHES

INGREDIENTS

  • 100 g dark chocolate (chopped or in chips)
  • 65 g butter plus a little extra for greasing the dishes
  • 3 eggs at room temperature
  • 100 g granulated sugar
  • 50 g plain flour
  • A handful of fresh lemon balm leaves

  • Baking paper

INSTRUCTIONS

    Melt the chocolate with butter in a bowl over a water bath and let it cool slightly. Blend the sugar with lemon balm leaves. Put it in a bowl, add eggs, and whisk into a light foam.

    The eggs must not be cold, so the chocolate with butter does not start to curdle. Stir in the chocolate with butter using a whisk. Finally, gently fold in the flour with a spatula.

    Grease the baking dishes with butter. You can line the sides with baking paper. Divide the mixture into them so that it reaches about 1 cm below the edge of the dish.

    Chill in the refrigerator for 1 hour.

    Preheat the oven to 180 degrees (fan). Bake according to the size of the dish for 8 – 10 minutes. Ideally, first bake one dish and test if the fondant is well baked. The surface should have a crust and the sides should be baked (the fondant will come out). The inside will remain liquid. Serve immediately.
