INGREDIENTS

  • 1 large yellow onion
  • 4 tablespoons olive oil
  • 100 g fresh baby spinach (or thawed and drained)
  • 200 g cream cheese
  • 1 tablespoon mayonnaise
  • 2 tablespoons fresh parsley (finely chopped)
  • 80 g Parmesan (finely grated)
  • 4 cloves garlic (more can be added to taste)
  • 6 chicken breasts (6× approx. 170 g)
  • 1 teaspoon ground sweet paprika
  • Salt
  • Pepper

INSTRUCTIONS

    First, prepare the filling: Peel and finely chop the onion. Heat 2 tablespoons of olive oil in a pan, and once the oil is hot, add the chopped onion and sauté over low to medium heat for 2–3 minutes. Then add the baby spinach and let it wilt (about 1 minute).

    Transfer the sautéed onion and spinach to a medium-sized bowl. Add the cream cheese, mayonnaise, finely chopped parsley, and finely grated Parmesan. Press 4 cloves of garlic into the bowl, mix everything with a fork, and season with salt and pepper.

    Wash, dry, and clean the chicken breasts. Cut into the thickest part of the meat to create a "pocket" that you will fill with the cheese mixture. Fill the cut breasts with the prepared mixture and close the "pocket" with a toothpick. Season the prepared chicken breasts with salt, pepper, and sprinkle with ground sweet paprika on both sides.

    Preheat the oven to 180 °C and line a baking dish (about 30 cm × 20 cm) with baking paper.

    Clean the pan in which the spinach was cooked and heat the remaining 2 tablespoons of olive oil over high heat. Place the chicken breasts in the hot oil and sear for about 1–2 minutes on each side over high heat until golden.

    After searing, transfer the breasts from the pan to the baking dish and bake at 170–180 °C for 20–25 minutes.

    Divide the finished stuffed chicken breasts onto individual plates and serve.
Tip
If you have leftover filling, you can spread it on the surface of the chicken breasts before baking or use it as a spinach-cheese spread – with freshly baked bread or rolls, it's a quick breakfast or snack. – You can also add 2 tablespoons of finely chopped sun-dried tomatoes to the filling along with the garlic and cream cheese.
