- 180 g sticky rice or round-grain rice (⅔ cup)
- Ripe mango

- 1/3 cup coconut milk
- ¼ teaspoon salt
- 1/4 cup sugar
INGREDIENTS FOR SALTY COCONUT SAUCE
- 1/3 cup coconut milk
- Teaspoons of salt
- 1 teaspoon rice flour
- 1 tablespoon water
INSTRUCTIONS
- 1Start making the syrup by mixing salt, sugar, and coconut milk - make sure you have this ready before the rice is steamed. After steaming the rice, it is good to mix the syrup and rice as soon as possible. Both ingredients should be warm when mixing.
- 2Once the rice is done, carefully mix the rice and syrup in a bowl and let it rest for 20 minutes.
- 3Salty coconut sauce - bring salt and coconut milk to a boil. In a small bowl, mix rice flour with water and add it to the coconut milk. Let it simmer briefly. This sauce is used for drizzling over the rice when serving.
- 4Serve the rice on a plate along with half a sliced mango and drizzle with the salty coconut sauce.
- 5Rinse the rice well (about 5 times) and soak it in water overnight (at least 4 hours). Drain the water through a sieve and shake off the excess water from the rice. Handle the soaked rice gently, as it is very delicate. Then place the rice in a permeable cloth and wrap it. Steam it under a lid in a steamer for about 30 minutes.
