INGREDIENTS
- 250 g porcini (or other mushrooms)
- 1 piece onion
- 100 ml cooking cream
- 200 ml vegetable broth
- 20 g butter
- 1 tablespoon oil
- 1 tablespoon whole grain spelt flour
- 2 teaspoons wine vinegar
- Salt
- Pepper

- Egg
INSTRUCTIONS
- 1Peel and finely chop the onion. Clean the mushrooms and cut them into pieces or slices. Sauté the onion in a teaspoon of canola oil until translucent, add the mushrooms and simmer on low heat for 10 minutes. The mushrooms will release liquid, enhancing their flavor. Then add the butter, let it melt, and sprinkle with flour. Sauté for a while, stirring, and then pour in the cream and broth (or water) and cook until a smooth sauce forms.
- 2Season with salt, ground pepper, and wine vinegar. Serve with rice and boiled or poached egg.
