INGREDIENTS

  • 500 g sea fish
  • 10 mussels
  • 6 cherry tomatoes
  • 3 tablespoons tomato purée
  • 1 clove of garlic
  • Extra virgin olive oil
  • 1 teaspoon chopped basil
  • Salt
  • Black pepper
  • 2 - 4 large shrimp
  • 1 teaspoon chopped parsley

INSTRUCTIONS

    Wash the fish, remove the scales, gut, fillet, and cut into smaller portions. Heat olive oil with a whole clove of garlic in a pan, add chopped parsley and basil, pieces of fish with bones and head, and shrimp.

    Add water to cover about half of the fish, let it simmer for a few minutes. Remove the garlic, add quartered cherry tomatoes and tomato paste, mussels, and add water so that the ingredients are almost completely submerged, and simmer for another 5 minutes.

    Serve as a soup in deep plates with toasted white bread.
