INGREDIENTS

  • 100 g of English bacon
  • 300 g of any apples (peeled)
  • 3 tablespoons of sunflower oil
  • 100 g of yellow onion (finely chopped)
  • 500 g of canned red cabbage (drained)
  • 2 tablespoons of white wine vinegar (can also use fermented)
  • 2 dried bay leaves
  • 1 kg of chicken thighs (4 larger pieces)
  • 100 ml of water
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 180–185 °C and prepare a deep baking dish (27 cm × 30 cm).

    Cut the bacon into small cubes and the apples into cubes of 1 cm × 1 cm. Then heat a large pan with sunflower oil over medium heat. Once the oil is hot, add the onion, bacon, and apples to the pan and sauté together for 5–6 minutes over medium heat. After the specified time, add the drained canned red cabbage, vinegar, bay leaf, salt, and pepper to the pan, mix, and sauté together for 3–4 minutes over medium heat.

    Meanwhile, wash and dry the chicken thighs. Once the mixture is sautéed, transfer the entire contents of the pan to the prepared baking dish and place the prepared chicken thighs on top of the cabbage. Season with salt and pepper, add water, cover with aluminum foil, and place in the preheated oven. Bake for 50–55 minutes at 180–185 °C.

    After the specified time, remove the aluminum foil from the baking dish, increase the oven temperature to 215–220 °C, and finish baking the thighs until they are golden brown (20–25 minutes). Once the thighs have a golden color, remove the baking dish from the oven, divide its contents into individual portions, and serve.
