INGREDIENTS
- 4 thin slices of beef sirloin
- 4 thin slices of pork neck
- 80 g cooked pork ham
- 80 g pancetta
- 100 g sausage
- 80 g Provolone cheese
- 100 g breadcrumbs
- 2 eggs for the omelet
- Sprig of flat-leaf parsley
- Extra virgin olive oil
- Freshly ground pepper
- Salt
SIDE DISH
- Small zucchini
- ½ small eggplant
- 10 cherry tomatoes
- 1 colorful bell pepper
- 4 small potatoes cooked in their skins and cooled
- 1 clove of garlic
- Sprig of rosemary
- Sprig of parsley
INSTRUCTIONS
- 1In a bowl, whisk the eggs with a pinch of salt and prepare a thin omelet on a shallow pan. Layer the omelet, cooked ham, and pieces of torn parsley leaves on the beef slices. Drizzle with olive oil, salt, and roll into a roulade. Secure with a wooden or metal skewer to prevent unrolling.
- 2Prepare the pork slices from the neck in the same way, layering them with slices of pancetta, grated Provolone cheese, and dust with breadcrumbs before rolling.
- 3Drizzle the rolls with olive oil and coat in breadcrumbs. Fry on all sides in a steak pan with a little olive oil.
- 4Crush the potatoes with the skin on, cutting larger pieces. Cut the zucchini, bell pepper, and eggplant into larger cubes, halve the cherry tomatoes, and sauté everything together with the potatoes, fresh rosemary, a whole clove of garlic, and a sprig of parsley in olive oil until softened to taste.
