INGREDIENTS FOR SALAD
- 300 g of dry wheat fusilli (can be replaced with any type of pasta)
- 250 g of cherry tomatoes
- 1 cucumber (about 250 g)
- 120 g of feta (or Balkan cheese)
- 10 g of fresh parsley (finely chopped)
- 5 g of fresh basil (finely chopped)
INGREDIENTS FOR DRESSING
- 50 ml of virgin olive oil
- 1 tablespoon of lemon juice
- 1⁄2 tablespoon of honey
- 2 teaspoons of Dijon mustard
- Salt
- Pepper
INSTRUCTIONS
- 1First, cook the pasta: Fill a large pot with a sufficient amount of water and bring it to a boil. Then throw the pasta into the water and cook for 12–15 minutes over medium heat. After cooking, drain the pasta and rinse it under cold water.
- 2Meanwhile, cut the cherry tomatoes and cucumber into small cubes in a large bowl. Then crumble the feta over them and add parsley and basil.
- 3Now prepare the dressing: In a jar (about 200 ml), put oil, lemon juice, honey, Dijon mustard, salt, and pepper. Close with a lid and shake.
- 4Add the cooled pasta to the bowl with the vegetables and pour over the dressing (amount to taste).
- 5Let the salad cool for at least 30 minutes (ideally 1–2 hours) and then serve.
