INGREDIENTS FOR SALAD

  • 300 g of dry wheat fusilli (can be replaced with any type of pasta)
  • 250 g of cherry tomatoes
  • 1 cucumber (about 250 g)
  • 120 g of feta (or Balkan cheese)
  • 10 g of fresh parsley (finely chopped)
  • 5 g of fresh basil (finely chopped)

INGREDIENTS FOR DRESSING

  • 50 ml of virgin olive oil
  • 1 tablespoon of lemon juice
  • 1⁄2 tablespoon of honey
  • 2 teaspoons of Dijon mustard
  • Salt
  • Pepper

INSTRUCTIONS

    First, cook the pasta: Fill a large pot with a sufficient amount of water and bring it to a boil. Then throw the pasta into the water and cook for 12–15 minutes over medium heat. After cooking, drain the pasta and rinse it under cold water.

    Meanwhile, cut the cherry tomatoes and cucumber into small cubes in a large bowl. Then crumble the feta over them and add parsley and basil.

    Now prepare the dressing: In a jar (about 200 ml), put oil, lemon juice, honey, Dijon mustard, salt, and pepper. Close with a lid and shake.

    Add the cooled pasta to the bowl with the vegetables and pour over the dressing (amount to taste).

    Let the salad cool for at least 30 minutes (ideally 1–2 hours) and then serve.
