INGREDIENTS

  • 400 g shrimps size 30/40
  • Cornstarch for coating
  • Panko breadcrumbs for coating
  • 2 heaping tablespoons of sour cream
  • 1 heaping tablespoon of mayonnaise
  • 3 tablespoons of ketchup
  • 1 lemon
  • 1 tablespoon of orange juice
  • Vegetable oil for frying
  • Salt
  • White pepper
  • 4 egg yolks

INSTRUCTIONS

    Clean the shrimps. First, remove the head, then peel off the shell and legs. Leave the last segment of the tail. Make a 2 mm longitudinal cut with a sharp knife to expose the vein, which we remove. Make the same cut on the underside of the shrimp and also remove the vein. Rinse the shrimps thoroughly and drizzle with 1 tablespoon of lemon juice.

    Coat the shrimps in cornstarch, then in salted egg yolks, and finally in panko breadcrumbs. Fry in hot oil until golden brown.

    For the dressing, mix sour cream, mayonnaise, ketchup, orange juice, and 1 tablespoon of lemon juice. Season with salt and pepper.

    Serve the shrimps drizzled with lemon juice and chilled dressing.
