INGREDIENTS FOR THE STARTER

  • 30 g whole wheat flour
  • ½ cube of yeast
  • 150 g milk
  • 1 teaspoon brown sugar

INGREDIENTS FOR THE DOUGH

  • 330 g whole wheat flour
  • 60 g brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • Pinch of salt
  • Zest of half a lemon
  • 60 g softened butter

INGREDIENTS FOR FINISHING

  • 1 egg
  • 30 g almond slices

INSTRUCTIONS

    Take the eggs and butter out of the fridge 1 hour before preparing the dough.

    Warm the milk until lukewarm. Mix the ingredients for the starter until smooth and let it rest for 15-20 minutes. Once the starter has risen, add it to the bowl along with the other ingredients except for the butter and knead into a smooth dough for at least 10 minutes. Cut the butter into pieces and gradually add it to the dough. Then knead the dough for another 5 minutes.

    Cover the bowl with the dough with a cloth and let it rise in a warm place for approximately 60 minutes. The dough should double in size.

    Turn the dough out onto a board, divide it into parts, form strands, and braid the Christmas bread.

    Place the braided bread on a baking sheet lined with parchment paper, cover with a cloth, and let it rise again. This takes approximately 45 minutes.

    After 30 minutes of rising, preheat the oven to top and bottom heat and set it to 170 °C. Once the bread has risen, brush it with beaten egg and sprinkle with almond slices. Bake for approximately 30 minutes until golden brown.
