INGREDIENTS

  • 200 g brown mushrooms
  • 1 shallot
  • 2 cloves of garlic
  • 20 g walnuts
  • 4 eggs
  • 1 whole grain baguette
  • A pinch of salt
  • A pinch of ground pepper
  • 1 teaspoon soy sauce
  • 1 tablespoon olive oil
  • A handful of flat-leaf parsley leaves

INSTRUCTIONS

    Finely chop the shallot. Clean the mushrooms and cut them into smaller pieces. Chop the walnuts and then toast them in a dry pan.

    Cut the baguette into slices at an angle, lightly drizzle with olive oil, and toast on both sides in a pan.

    Then fry the eggs. Lightly salt them.

    Drizzle a little oil into the pan, add the shallot, and after a while, add the mushrooms. Simmer for a few minutes until softened. Season with salt, ground pepper, and soy sauce. Add the toasted walnuts and finely chopped flat-leaf parsley.

    Serve the mushroom mixture on the baguette along with the fried egg.
