  • 400 g whole blanched almonds
  • 4 sprigs fresh thyme
  • 4 teaspoons coarsely chopped lemon zest
  • 2 tablespoons lemon juice
  • 4 teaspoons coarse Himalayan salt
  • 2 pcs cayenne chili pepper
  • 8 cloves garlic
  • 2 tablespoons chili oil

Place 200 g of whole almonds in a hot dry pan and roast. Add plucked thyme sprigs, lemon zest, and salt. Drizzle with lemon juice and roast until golden.

In a second pan, heat the chili oil, add sliced cayenne pepper, sliced garlic, and sauté. Add the almonds and roast together until golden.
