- 250 g black salsify
- 200 g potatoes
- 1 piece shallot
- 1 tablespoon sunflower oil
- 0.5 liter chicken broth
- 1 clove garlic
- 1 teaspoon salt
- Ground pepper
INGREDIENTS FOR SAVORY GRANOLA FOR SERVING
- 20 g almonds
- 20 g hazelnuts
- 1 tablespoon sunflower seeds
- 1 tablespoon whole poppy seeds
- Pinch of salt
INSTRUCTIONS
- 1Peel the potatoes and cut them into small pieces. Clean the black salsify using a potato peeler and cut it into cubes. Work with gloves, as the root secretes a substance that sticks to the fingers. Finely chop the shallot. Crush the garlic clove.
- 2Pour oil into a pot and fry the onion until translucent. Add the black salsify and sauté for about 2 minutes. This will extract more flavor from the vegetables. Add the potatoes, pour in the broth, and cook until softened.
- 3Transfer the soup to a blender and blend. This will give it a fluffy and creamy texture. Season with salt, ground pepper, and garlic.
- 4Chop the nuts into smaller pieces, mix with seeds, salt, and poppy seeds, and toast in a pan for a few minutes.
- 5Before serving, sprinkle the soup with savory granola and drizzle with olive oil.
