INGREDIENTS

  • approx. 800 g pork knuckle or ribs (with bone)
  • 3 large shallots
  • 6 cloves of garlic
  • 3 carrots
  • 250 g baby Pak choi
  • 160 g shiitake mushrooms
  • A handful of fresh coriander
  • 100 g fresh ginger
  • 200 g Soba noodles
  • 2 tablespoons of five-spice mix (ground star anise, cinnamon, fennel, black pepper, cloves)
  • A handful of mung bean sprouts
  • 2 tablespoons of rice Mirin sauce
  • 5 tablespoons of soy sauce
  • 1 tablespoon of lime juice
  • 1 tablespoon of sesame oil
  • 4 eggs size M
  • 1 tablespoon of butter
  • Black sesame
  • Chili pepper to taste (optional)

INSTRUCTIONS

    In a large pot, quickly sear the meat, pour in 1 liter of cold water, add peeled shallots, peeled whole garlic cloves, peeled and chopped ginger, half of the mushrooms, cleaned and halved carrots, and the spice mix. Bring to a boil. Reduce the heat to a minimum and let the broth simmer for up to 8 hours.

    Once the broth is ready, strain it. Remove the meat and set it aside. Season the broth with Mirin sauce, soy sauce, lime juice, and sesame oil. Add Pak choi, chopped coriander, and simmer together for a while. In another pot, cook Soba noodles according to the instructions, heavily salting the water. Sauté the second half of the mushrooms in butter. Boil the eggs for about 7 minutes, cool them in cold water. Then peel and halve them.

    Prepare a portion of Soba noodles, meat, and sautéed mushrooms on a plate. Add sprouts and eggs. Pour over the broth and serve sprinkled with black sesame seeds, optionally with chili pepper.
