INGREDIENTS

  • 800 g canned white butter beans
  • 2 cloves of garlic
  • 250 g cherry tomatoes
  • 1/2 teaspoon olive oil
  • 400 g peeled crushed canned tomatoes
  • 1 teaspoon dried oregano
  • 2 red peppers (sliced, 2× 200 g)
  • Juice of 1/2 medium lemon
  • Zest of 1/2 medium lemon (finely grated)
  • 200 g fresh spinach (or thawed and excess water removed)
  • 100 g feta cheese (crumbled into pieces)
  • 5 small pita breads or slices of sourdough bread for serving (5× 50 g)

INSTRUCTIONS

    First, drain and rinse the beans, peel and press the garlic, and wash and quarter the cherry tomatoes.

    In a large pot, heat 1/2 teaspoon of olive oil over low heat. Add the pressed garlic to the heated oil and sauté for 30–60 seconds over medium heat. Add the canned tomatoes, chopped cherry tomatoes, dried oregano, and drained white beans, and cook over low to medium heat for 10–12 minutes.

    Then add the sliced red pepper, lemon juice, and finely grated zest of 1/2 lemon, and cook for another 5 minutes over low to medium heat. Add the frozen spinach and cook for 1–2 minutes over low to medium heat.

    Finally, remove the pot from the heat, add the crumbled feta cheese to the mixture, and stir. Divide the finished bean mix into individual portions and serve with pita or sourdough bread.
