INGREDIENTS
- 100 g pitted dried dates (soaked in water overnight)
- 50 ml rapeseed oil
- 200 g whole oats (gluten-free)
- 40 g hulled sunflower seeds
- 400 g frozen forest fruit mix
- 2 medium ripe bananas (2× approx. 90 g without peel)
INSTRUCTIONS
- 1Preheat the oven to 180 °C, prepare a baking sheet and line it with baking paper.
- 2Drain the soaked dates and place them in a tall container. Add the oil and blend into a smooth paste. Then place the date paste in a medium-sized bowl, add the oats and sunflower seeds, and mix.
- 3Spread the mixture on the prepared baking sheet and bake until golden for 25–30 minutes at 180–185 °C. Turn the granola after 10 and 20 minutes of baking. So, you will turn it twice in total. Check the mixture in the last 5–10 minutes and turn if necessary. After removing, let it cool for at least 20 minutes.
- 4While the granola is baking, put the forest fruits in a medium-sized saucepan and bring to a boil. Then reduce the heat to low and cook for 8–10 minutes. Meanwhile, mash the bananas, and after the specified time, add them to the forest fruits and cook for another 5 minutes or until the desired consistency. If the mixture is too thick, add a little water. After cooking, let the fruit cool for at least 15 minutes.
- 5Serve the granola with the stewed fruit.
