INGREDIENTS

  • 50 g whole grain spelt flour
  • 100 ml semi-skimmed milk
  • 1 egg size M
  • 1 handful of fresh baby spinach
  • 1 small clove of garlic (finely grated)
  • 1 tablespoon canola oil
  • ½ teaspoon baking powder
  • 70 g unsalted canned corn (drained)
  • 2 tablespoons spring onion (finely chopped)
  • Salt

INSTRUCTIONS

    Place the flour, milk, eggs, baby spinach, garlic, canola oil, baking powder, and salt into a tall mixing container and blend everything with a hand blender into a smooth batter. Stir in the drained corn and finely chopped spring onion into the finished batter.

    Then heat a pan with a diameter of at least 22 cm over medium heat. Once heated, spread the batter over the entire surface with a ladle. Cook the pancake dry over medium heat for 2–3 minutes on each side. Continue this process until all the batter is used.

    Serve the finished pancakes immediately.
