INGREDIENTS
- 150 g all-purpose flour
- 120 g butter
- 3-4 tablespoons ice water
- 125 g fresh goat cheese
- 2 large red onions
- 4 ripe figs
- 2 eggs size M
- 10 leaves fresh mint
- 3 tablespoons blanched almond slices
- 1 tablespoon sunflower oil
- Salt
INSTRUCTIONS
- 1First, prepare the dough for the quiche. Mix the flour with chilled butter, cut into small pieces. The flour and butter will become flaky. Then add salt and ice water. Work into a smooth dough and let it rest in the refrigerator for at least an hour.
- 2Sauté finely chopped onion in oil. Once it is golden brown, let it cool. Mix in eggs, chopped mint, 2 tablespoons of almonds, goat cheese (reserve some for the top), and salt.
- 3Roll out the dough into a thin sheet. Line a round 25 cm diameter form with the dough. Prick with a fork and bake for 20 minutes in a preheated oven at 180 degrees Celsius. Then fill with the prepared mixture, top with sliced figs, sprinkle with the remaining almonds and pieces of goat cheese. Bake for 35 - 40 minutes at 180 degrees Celsius.
