INGREDIENTS

  • 2 pieces of common flounder fillet approx. 150 g
  • 2 heaping tablespoons of honey
  • 5 tablespoons of soy sauce
  • 4 tablespoons of lemon juice
  • 1/2 unwaxed lemon
  • 3 cloves of garlic
  • 1 teaspoon of dried chilli flakes
  • ½ fresh Cayenne chilli pepper
  • 1 handful of fresh flat-leaf parsley
  • 1 handful of fresh mustard microgreens
  • 1 tablespoon of sunflower oil
  • Salt

INSTRUCTIONS

    Wash the fish and salt it. In a bowl, mix honey, soy sauce, lemon juice, crushed garlic, finely chopped chilli pepper, and dried chilli. Mix well.

    Heat oil in a pan and quickly sear the fish (skin side down).

    Then pour over the prepared glaze, add sliced lemon, and let it bake on each side for about 3 minutes. Then remove the fish.

    Stir chopped parsley into the mixture and reduce until it reaches a honey-like consistency. It will take a few minutes.

    Serve the fish drizzled with glaze and fresh mustard sprouts.
