INGREDIENTS
- 300 g rockfish fillets
- 10 g aged cheese (e.g., Grana Padano)
- 20 g breadcrumbs from whole grain bread
- 20 g olive oil
- A handful of fresh herbs (chives, basil, parsley)
- Pepper
- Salt
- Lemon for serving
SIDE DISH
- 400 g potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt

INSTRUCTIONS
- 1Preheat the oven to 220 °C for top and bottom heating.
- 2Wash the potatoes and cut them into sixths. Bring a pot of water to a boil on the stove, and once it's hot, carefully add the potato pieces and cook for 5 minutes. Then drain the water, let the potatoes dry, and arrange them on a baking sheet lined with parchment paper. Drizzle with oil, lightly salt, and bake for 25 minutes. Stir halfway through. If the potatoes do not reach the desired color in the given time, turn on the oven's grill function to medium and bake for another 3 minutes.
- 3For the herb crust, mix grated cheese, breadcrumbs, olive oil, and finely chopped herbs.
- 4Pat the fish dry with a paper towel, then salt and pepper it. Place parchment paper on a baking sheet, lay the fillets on it, layer the herb crust on top, and press firmly.
- 5Place the baking sheet in the preheated oven at 200 °C and bake for 12 minutes.
