INGREDIENTS

  • 40 g of cheddar (coarsely grated)
  • 60 g of gouda (coarsely grated)
  • 1⁄2 small yellow onion (approx. 25 g)
  • 5 g of fresh parsley (or coriander)
  • 1 medium tomato (approx. 100 g)
  • 2 wheat tortillas (⌀ approx. 24 cm)
  • 150 g of cooked ground beef
  • 60 g of frozen corn (thawed – just pour hot water over it)
  • Salt

INSTRUCTIONS

    First, prepare the cheese mixture: In a small bowl, mix both coarsely grated cheeses.

    Peel the onion and finely chop it along with the parsley. Dice the tomato into small cubes. Then place everything into another bowl, season with salt, and mix.

    Place 1 tortilla in a larger pan (⌀ min. 24 cm) and spread 1⁄2 of the ground meat over it (if you don't have pre-cooked ground beef at home, you can easily prepare it: Heat 1 tablespoon of canola oil in a pan, add 180 g of ground beef (12–15% fat), salt, and pepper, and cook for 5–8 minutes over medium heat until the meat is done) and 1⁄2 of the cheese mixture. Turn the heat to medium, and while the cheese on the tortilla melts, add 1⁄2 of the thawed corn and 1⁄2 of the prepared tomato mixture. Then fold the tortilla in half and cook for 20–30 seconds over medium heat. Then flip the tortilla, cook for another 20–30 seconds, and then transfer it from the pan to a plate. Repeat the same process with the remaining tortilla.

    Cut the prepared tortillas into triangles and serve.
