INGREDIENTS

  • 2 whole wheat tortillas (⌀ 22 cm)

INGREDIENTS FOR CHICKEN

  • 2 cloves of garlic
  • ½ teaspoon sweet ground paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon lemon zest (finely grated)
  • 1 tablespoon canola oil
  • 1 large chicken breast (approx. 200 g)
  • Salt
  • Pepper

INGREDIENTS FOR VEGETABLES

  • 100 g fresh white cabbage
  • 1 small red or yellow onion (your choice)
  • 1 medium tomato (approx. 80 g)
  • Salt

INGREDIENTS FOR DRESSING

  • 1 tablespoon fresh chives
  • 100 g semi-skimmed quark from a tub
  • 1 teaspoon lemon juice
  • 1 tablespoon dried basil (you can also use chopped fresh)

  • Pepper
  • 50 g plain yogurt (3.5% fat)

INSTRUCTIONS

    First, peel the garlic and crush it. Then take a bowl, mix ground paprika, ground cumin, lemon zest, salt, pepper, and canola oil, and stir in the crushed garlic. Next, slice the chicken breast lengthwise into 2 fillets, coat them in the prepared mixture in the bowl, and set aside for 20 minutes.

    In the meantime, prepare the vegetables: Finely chop the white cabbage. Peel the onion and slice it thinly. Mix the chopped cabbage with the onion and a pinch of salt and let the mixture sit for about 20 minutes to soften the cabbage. Meanwhile, slice the tomato.

    Next, prepare the dressing: Finely chop the chives and mix them in a small bowl with quark, plain yogurt, lemon juice, dried basil, salt, and pepper.

    After 20 minutes of marinating the chicken, take a small non-stick pan and heat it dry over high heat. Place the oiled chicken fillets on the heated pan and fry them over medium to high heat for 3-5 minutes on each side (cooking time depends on the thickness of the meat). Remove the fried chicken from the pan and slice it into smaller, thinner pieces.

    Finally, take 2 tortillas and divide them among several slices of chicken, cabbage with onion, dressing, and tomato slices. Fold and arrange the tortillas.
Tip
If you like spicy onions but find them too pungent, try rinsing them with hot to boiling water – it will soften their flavor.
