INGREDIENTS

  • 2 salmon fillets with skin (2× approx. 150 g)
  • 1 tablespoon canola or sunflower oil
  • ½ tablespoon liquid honey
  • 1 small clove of garlic
  • 50 g fresh parsley leaves
  • 1 tablespoon fresh dill (can be substituted with dried)
  • Zest of 1 large lemon (finely grated)
  • Juice of 1 large lemon
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 50 ml water
  • Salt

INSTRUCTIONS

    First, preheat the oven to 200-205 °C and prepare a baking sheet with minimum dimensions of 30 cm × 30 cm and line it with baking paper.

    Then prepare the salmon fillets: Wash them, pat dry, coat with canola or sunflower oil, salt, pepper, drizzle with honey, and place on the prepared baking sheet. Then place the sheet in the preheated oven and bake according to the thickness of the fillets for 10-11 minutes at 200-205 °C.

    Meanwhile, prepare the sauce: Peel the garlic, place it in a tall mixing container, and add parsley leaves, dill, lemon zest and juice, salt, pepper, olive oil, dried oregano, and 50 ml of water. Then blend the entire contents of the container with a hand blender and let the resulting sauce stand at room temperature.

    Once the salmon is done, divide the fillets into 2 portions and serve with the prepared sauce.
