INGREDIENTS

  • 2 tomatoes
  • 1/2 red bell pepper (seeded, finely chopped)
  • 1/2 red onion (finely chopped)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 4 chorizo sausages
  • 4 baguettes

Chimichurri Sauce

  • Parsley (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar

INSTRUCTIONS

  • 1
With a small sharp knife, cut the tomatoes into quarters. Use a spoon to remove the seeds. Chop the flesh finely and place it in a large bowl.
  • 2
Add the bell pepper, onion, oil, and vinegar to the bowl with the tomatoes, season well, and then mix.
  • 3
For the chimichurri sauce, place all the ingredients in a bowl and stir until well combined. Let it rest for 1 hour.
  • 4
Meanwhile, preheat a grill pan or griddle to medium heat. Cook the chorizo, turning frequently, for about 10 minutes.
  • 5
Slice the baguettes lengthwise until almost cut through. Open and grill cut-side down for 2 minutes. Divide the chorizo among the baguettes, top with chimichurri and tomato mixture.
