INGREDIENTS
- 2 medium onions
- 3 cloves of garlic
- 600 g cauliflower
- 1 handful of fresh parsley
- 3 tablespoons of canola or sunflower oil
- 600 g chicken breasts
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt
- Pepper
INSTRUCTIONS
- 1Preheat the oven to 190–195 °C and prepare a baking dish (30 cm × 25 cm).
- 2Peel the onions and garlic, place them in a blender and chop coarsely. Wash the cauliflower, remove the florets, add them to the onions and garlic, and then blend the entire mixture into small pieces resembling rice. Finely chop the parsley.
- 3Heat 3 tablespoons of oil in a pan over medium heat, add the cauliflower mixture from the blender, and sauté for 5–7 minutes over medium heat. Then add 50 ml of water and the parsley to the pan, stir the mixture in the pan, and transfer it to the prepared baking dish.
- 4Wash and clean the chicken breasts and place them in a bowl. Add thyme, rosemary, salt, and pepper, mix well, and place the seasoned meat on the cauliflower rice in the baking dish. Place the dish in the preheated oven and bake for 27–30 minutes at 190–195 °C.
- 5Divide the finished chicken with cauliflower rice into 4 servings and serve.
