INGREDIENTS
- 1 cup chopped parsley (flat-leaf parsley)
- 8 cloves of garlic (crushed)
- 2 shallots (sliced)
- 2 teaspoons dried oregano
- 2 small red chili peppers with seeds (diced)
- 6 tablespoons red wine vinegar
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1.3 cups quality extra virgin olive oil
INSTRUCTIONS
- 1Add chopped parsley, garlic, shallot, oregano, red chili, red wine vinegar, salt, and pepper to the bowl of a food processor.
- 2Transfer the mixture to a small bowl and pour extra virgin olive oil over it.
- 3Serve with your favorite grilled meat and vegetables or use as a marinade.
