Ingredients

  • 30 g butter
  • 30 g finely grated coconut
  • 400 g semi-coarse flour
  • 12 g baking powder
  • 37 g vanilla pudding powder
  • 100 g granulated sugar
  • 1 egg
  • 220 ml semi-skimmed milk
  • 70 ml sunflower oil
  • 300 g fresh pitted cherries

Instructions

  • 1
Melt the butter – you can place it in a bowl and heat it for 30–60 seconds in the microwave at 750 W or melt it on the stove in a saucepan (2–3 minutes on low heat will suffice).
  • 2
Preheat the oven to 180–185 °C, prepare a baking dish measuring 27 cm × 35 cm, grease it with melted butter, and sprinkle with grated coconut.
  • 3
Take a large bowl, add the semi-coarse flour, baking powder, vanilla pudding powder, and sugar, and mix everything together. Add the eggs, milk, and sunflower oil to the mixture and work into a thinner batter.
  • 4
Pour the finished batter into the prepared baking dish and spread it evenly over the bottom. Then evenly sprinkle the batter with cherries, gently pressing them into the batter.
  • 5
Place the baking dish with the batter into the preheated oven and bake for 35–40 minutes at 180–185 °C until the surface of the batter turns golden brown.
  • 6
Remove the baking dish from the oven and let the bubble cake cool in the dish for at least 45 minutes.
  • 7
After cooling, cut the bubble cake into 12 servings and serve.
