Ingredients
- 30 g butter
- 30 g finely grated coconut
- 400 g semi-coarse flour
- 12 g baking powder
- 37 g vanilla pudding powder
- 100 g granulated sugar
- 1 egg
- 220 ml semi-skimmed milk
- 70 ml sunflower oil
- 300 g fresh pitted cherries
Instructions
- 1Melt the butter – you can place it in a bowl and heat it for 30–60 seconds in the microwave at 750 W or melt it on the stove in a saucepan (2–3 minutes on low heat will suffice).
- 2Preheat the oven to 180–185 °C, prepare a baking dish measuring 27 cm × 35 cm, grease it with melted butter, and sprinkle with grated coconut.
- 3Take a large bowl, add the semi-coarse flour, baking powder, vanilla pudding powder, and sugar, and mix everything together. Add the eggs, milk, and sunflower oil to the mixture and work into a thinner batter.
- 4Pour the finished batter into the prepared baking dish and spread it evenly over the bottom. Then evenly sprinkle the batter with cherries, gently pressing them into the batter.
- 5Place the baking dish with the batter into the preheated oven and bake for 35–40 minutes at 180–185 °C until the surface of the batter turns golden brown.
- 6Remove the baking dish from the oven and let the bubble cake cool in the dish for at least 45 minutes.
- 7After cooling, cut the bubble cake into 12 servings and serve.
