Ingredients
- 8 slices of English bacon
- 1 thick slice of bread
- 1 tablespoon of rapeseed or sunflower oil
- 2 eggs
- 2 heads of romaine lettuce
- 2 medium tomatoes
- 1 handful of fresh chives
For the Dressing
- 50 g of mayonnaise
- 2 tablespoons of lemon juice
Instructions
- 1Preheat the oven to 160°C and line a baking sheet with parchment paper.
- 2Arrange the bacon slices on the lined baking sheet. Tear the bread into smaller pieces, add them to the sheet, drizzle with 1 tablespoon of oil, and season with salt. Mix the contents of the sheet, place it in the oven, and bake for 10–12 minutes at 160–170°C. Halfway through baking, turn the bread pieces and bacon to ensure even cooking.
- 3While the croutons and bacon are baking, cook the eggs: Place them in a small saucepan, cover with water, bring to a boil over high heat, and cook for 5 minutes on medium heat. Then remove the saucepan from the heat and let the eggs sit in the hot water for another 5 minutes. Cool them under running cold water.
