  • 100 g butter
  • 50 g ground hazelnuts
  • 120 g plain white wheat flour
  • 30 g white powdered sugar
  • 40 g vanilla pudding powder
  • 1 egg
  • ½ teaspoon ground cinnamon
  • 30 g granulated sugar

Instructions

    Take a larger bowl, add butter, ground hazelnuts, plain flour, white sugar, and vanilla pudding powder, and work into a smooth dough. Wrap the resulting dough in cling film, place it in the fridge, and let it rest for at least 40 minutes.

    After the dough has rested, preheat the oven to 175⁠–⁠180 °C, prepare a baking tray measuring 30 cm × 40 cm, and line it with baking paper.

    Take the rested dough out of the fridge and form balls weighing 27⁠–⁠30 g (you should get approximately 12 balls). Once all the dough is processed, flatten the balls with your palm into discs about 6⁠–⁠7 cm in diameter and place them on the lined baking tray.

    Now prepare 2 smaller bowls: Crack the egg into one bowl and beat it with a fork. In the second bowl, mix cinnamon with brown sugar. Then brush all the discs on the tray with the beaten egg and sprinkle them with the cinnamon and brown sugar mixture.

    Place the tray in the preheated oven and bake for 15⁠–⁠17 minutes at 175⁠–⁠180 °C.

    Remove the finished cookies from the oven and let them cool on the tray for at least 30 minutes. After this time, they can be served.
