INGREDIENTS
- 1 onion
- 1 carrot
- 2 cloves of garlic
- 1 can of red beans
- 3 tablespoons of tomato paste
- 1 teaspoon of paprika powder
- 1 teaspoon of oregano
- ½ teaspoon of ground chilli
- A pinch of salt
- 1 tablespoon of oil
- 2 large tortillas
- 1 avocado
- Juice of 1/2 lemon
- 2 handfuls of salad
- 1 large tomato
INSTRUCTIONS
- 1Clean the vegetables. Chop the onion and garlic finely. Cut the carrot into small cubes.
- 2Pour oil into a pan and fry the prepared vegetables over low heat. Then add the tomato paste and spices, stir. Add the rinsed beans and partially mash them with a spatula. Season with salt, stir, and let it heat through.
- 3Halve the avocado, remove the pit and skin, and mash with a fork. Add the juice of half a lemon and season with salt and pepper. Stir.
- 4Place torn or chopped lettuce, bean mixture, mashed avocado, and sliced tomatoes on the tortilla. Carefully wrap and grill the burrito on both sides in a pan.
