INGREDIENTS

  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 1 can of red beans
  • 3 tablespoons of tomato paste
  • 1 teaspoon of paprika powder
  • 1 teaspoon of oregano
  • ½ teaspoon of ground chilli
  • A pinch of salt
  • 1 tablespoon of oil
  • 2 large tortillas
  • 1 avocado
  • Juice of 1/2 lemon
  • 2 handfuls of salad
  • 1 large tomato

INSTRUCTIONS

    Clean the vegetables. Chop the onion and garlic finely. Cut the carrot into small cubes.

    Pour oil into a pan and fry the prepared vegetables over low heat. Then add the tomato paste and spices, stir. Add the rinsed beans and partially mash them with a spatula. Season with salt, stir, and let it heat through.

    Halve the avocado, remove the pit and skin, and mash with a fork. Add the juice of half a lemon and season with salt and pepper. Stir.

    Place torn or chopped lettuce, bean mixture, mashed avocado, and sliced tomatoes on the tortilla. Carefully wrap and grill the burrito on both sides in a pan.
