INGREDIENTS
- 1 small carrot (approx. 50 g)
- 1 small zucchini (approx. 120 g)
- 30 g fresh baby spinach
- 80 g apple puree
- 50 g liquid honey
- 50 g liquid honey 1 egg size M
- 120 g smooth whole wheat flour
- 40 g fine oats
- 30 g Dutch cocoa
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 50 g dark chocolate (70%)

INSTRUCTIONS
- 1First, preheat the oven to 180 °C and prepare a baking sheet lined with parchment paper.
- 2Peel the carrot, wash the zucchini, and grate both finely into a large bowl. Rinse the baby spinach under cold water, chop finely, and add to the bowl along with the apple puree, honey, and 1 egg. Mix the contents of the bowl, add whole wheat flour, oats, Dutch cocoa, baking powder, and cinnamon, and work the mixture into a smooth dough. Finally, coarsely chop the chocolate and mix it into the dough in the bowl.
- 3Shape the finished dough into 12 circles on the lined baking sheet. Then press the circles down with your palm to a maximum height of 1 cm, place the sheet in the oven, and bake for 10–15 minutes at 175–180 °C.
- 4Let the finished cookies cool for a while after baking and then serve.
