INGREDIENTS

  • 350 g raw sweet potatoes
  • 250 g broccoli
  • ½ small lemon
  • 20 g butter
  • 1 teaspoon ground chili
  • 400 g salmon fillets (approx. 2 fillets)
  • 1 handful fresh parsley
  • 100 g Balkan cheese
  • Salt
  • Pepper

YOU WILL ALSO NEED

  • Baking paper

INSTRUCTIONS

  • 1
First, preheat the oven to 180–185 °C, prepare a baking dish measuring 20 cm × 30 cm, and line it with baking paper.
  • 2
Peel the sweet potatoes and cut them into thin slices, break the broccoli into florets, and slice the lemon thinly. Then take a small saucepan, add the butter, and melt it over low heat (this will take 1–2 minutes). Next, place the sweet potato and lemon slices, broccoli florets, salt, pepper, ground chili, and melted butter into the prepared baking dish and mix. Place the salmon fillets on top of the mixture, season with salt and pepper. Then place the baking dish in the oven and bake for 20–25 minutes at 180–185 °C.
  • 3
Meanwhile, roughly chop the parsley and crumble the Balkan cheese.
  • 4
When the salmon and vegetables are done, remove the baking dish from the oven, sprinkle the dish with crumbled Balkan cheese and chopped parsley, and serve.
Tip
You can slice the other half of the lemon into wedges and serve with the salmon – you can season the salmon with lemon juice as needed.
