INGREDIENTS
- 3 eggs
- 200 g cottage cheese
- 1 tablespoon milk
- 100 g ham
- 40 g hard cheese (Edam, Gouda)
- 50 g young nettles
- Parsley stems
- 70 g whole grain spelt flour
- 4 g baking powder
- 1/2 teaspoon salt
- 1 teaspoon dried garlic
- A pinch of ground pepper
INSTRUCTIONS
- 1Preheat the oven to 180 °C with top and bottom heat.
- 2Blanch the nettles in hot water, then place them in cold water for a minute and dry them. Remove the leaves and cut them into smaller pieces. Remove the leaves from the parsley stems and chop finely.
- 3Crack the eggs and separate the yolks. Whisk the egg whites into stiff peaks. Blend the yolks with cottage cheese and milk. Add finely chopped ham, cheese, young nettle leaves, and parsley. Stir, add flour with baking powder, and season with salt, pepper, and dried garlic. Stir and gently fold in the egg whites into the batter.
- 4Divide the batter into muffin cups or a well-greased and floured muffin tin and bake for 30 minutes. Do not open the oven during the first half of the baking time to prevent the muffins from collapsing.
