INGREDIENTS

  • 500 g all-purpose flour
  • 3 eggs size M
  • Zest of 1 lemon
  • 150 g butter
  • 18 g baking powder with cream of tartar
  • 100 g blanched almond slices
  • 20 g vanilla sugar
  • 180 g powdered sugar
  • 250 g soft curd (in a tub)
  • 100 g rozinek

INSTRUCTIONS

    Let the butter soften to room temperature. Add powdered sugar, vanilla sugar, and 2 eggs. Whisk together into a light foam. Then add the curd and sifted flour mixed with baking powder. Next, add raisins, lemon zest, and 2/3 of the almonds. Knead into a consistent dough. Divide the dough in half and form 2 loaves. Brush them with beaten egg and sprinkle with the remaining almonds.

    Bake on a baking sheet lined with parchment paper in a preheated oven with top and bottom heat. Bake for 10 minutes at 200 degrees and then reduce the temperature to 160 degrees. Bake for another approximately 45-50 minutes. Test with a skewer to see if the dough sticks. Serve the Easter bread immediately after baking when it is beautifully soft and moist. If you want to consume it later, let it rest in aluminum foil for at least 1-2 days. It goes great with strawberry jam.
