INGREDIENTS
- 600 g kimchi
- 200 g mushroom mix (oyster mushrooms, white shimeji, shiitake)
- 250 g Mie noodles
- 1 bunch of spring onions approx. 100 g
- 4 cloves of garlic
- 1 handful of Thai basil
- 1 cayenne chili pepper
- 4 tablespoons of red chili paste
- 2 tablespoons of sunflower oil
- 2 tablespoons of sesame oil
- 1 tablespoon of butter
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1Slice the spring onion into rings and the peeled garlic into slices. Sauté together in olive oil. Then add the chopped chili pepper, oyster mushrooms cut into smaller pieces, and 2 teaspoons of red chili paste. Let it all become fragrant. Add kimchi, 2/3 of the torn basil, and pour in 750 ml of water. Salt and pepper to taste. Simmer together on low heat for 20 minutes.
- 2Meanwhile, sauté the shiitake and shimeji mushrooms in butter. Salt, pepper, and set aside. Soak the noodles in 80-degree water for 10 minutes. Then drain, add sesame oil and 2 teaspoons of red chili paste. Quickly sauté in a hot pan for a short time.
- 3Serve the kimchi soup with noodles, buttered mushrooms, and fresh basil.
