  • 400 g cauliflower
  • 1 handful fresh parsley
  • 2 cloves garlic
  • 3 eggs size M
  • 180 g wholegrain spelt flour
  • 1 tablespoon dried marjoram
  • Salt
  • Pepper

    Bring about 1 liter of salted water to a boil in a pot. Meanwhile, break the cauliflower into smaller florets. Once the water starts boiling, add the cauliflower florets and cook them for 7–8 minutes on high heat until the cauliflower softens. In the meantime, finely chop the parsley and peel the garlic. Then drain the cooked cauliflower, cool it under cold water, and mash it into small pieces in a large bowl using a potato masher.

    Preheat the oven to 190–195 °C and line a baking sheet (30 cm × 40 cm) with baking paper. Press the peeled garlic into the bowl with the cauliflower, add the eggs, spelt flour, dried marjoram, chopped parsley, salt, and pepper, and mix everything together. Form patties from the resulting dough with a diameter of 10 cm and a height of about 2 cm and place them on the lined baking sheet. Once all the dough is used, put the baking sheet in the oven and bake for 40–45 minutes at 190–195 °C. Serve the baked patties immediately.
