INGREDIENTS

  • 300 g raw potatoes (cooking type A)
  • 1 tablespoon dried marjoram
  • 100 g semi-fat quark
  • 3 tablespoons canola or sunflower oil
  • 1 egg size M
  • 30 g corn breadcrumbs
  • ½ teaspoon baking soda
  • Salt
  • Pepper

INSTRUCTIONS

    At least 4 hours in advance, cook the potatoes in their skins: Place the potatoes in a pot, cover with plenty of water, add salt, and bring to a boil over high heat. Once the water starts boiling, reduce the heat to medium and cook the potatoes for 30⁠–⁠35 minutes. After this time, check if the potatoes can be easily pierced with a fork ⁠–⁠ if not, cook them a bit longer (the total cooking time depends on the size of the potatoes). Drain the cooked potatoes and let them cool thoroughly.

    Then preheat the oven to 190⁠–⁠195 °C, prepare a baking sheet (25 cm × 30 cm), and line it with baking paper. Also, prepare a large bowl.

    Peel the cooled potatoes and finely grate them into the prepared bowl. Add marjoram, quark, canola oil, eggs, corn breadcrumbs, baking soda, salt, and pepper to the grated potatoes and mix. Form patties weighing 50⁠–⁠55 g from the resulting dough on the lined baking sheet. Once all the dough is used, place the sheet in the preheated oven and bake for 12⁠–⁠15 minutes at 190⁠–⁠195 °C. Turn the pancakes halfway through baking.

    After baking, remove the pancakes from the oven and serve immediately.
