  • 400 g cherry tomatoes
  • 6 cloves of garlic
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon brown sugar
  • Zest of 1 medium lemon (finely grated) + juice of 1 medium lemon
  • 200 g Greek yogurt (0% fat)
  • Salt
  • Pepper

  • Fresh oregano

INSTRUCTIONS

    First, preheat the oven to 195⁠–⁠200 °C and prepare a baking dish at least 20 cm × 25 cm in size.

    Place the cherry tomatoes and unpeeled garlic cloves in the baking dish. Then, in a small bowl, mix 3 tablespoons of olive oil, oregano, thyme, brown sugar, lemon zest and juice, salt, and pepper, and stir. Pour the resulting mixture over the cherry tomatoes and garlic, mix, place the baking dish in the preheated oven, and bake for 20⁠–⁠22 minutes at 195⁠–⁠200 °C.

    Now take 2 bowls, divide the Greek yogurt between them, and layer the roasted cherry tomatoes on top. Then squeeze the roasted garlic cloves from their skins into the bowls (3 cloves per bowl). Finally, divide the juice from the baking dish into the bowls and serve.
