INGREDIENTS
- 600 g chicken breasts
- 2 cloves of garlic
- 1 tablespoon ground coriander
- 1 tablespoon ground sweet paprika
- 1 tablespoon dried oregano
- Zest of 1 small lemon (finely grated) + juice of 1 small lemon
- 2 tablespoons rapeseed or sunflower oil
- Salt
- Pepper
INGREDIENTS FOR TZATZIKI
- 2 handfuls of fresh mint (optional)
- 2 handfuls of fresh dill
- 1 medium cucumber (approx. 250 g)
- 1 clove of garlic
- 150 g plain yogurt (3.5% fat)
- Juice of ½ medium lemon
- Salt
INSTRUCTIONS
- 1Cut the chicken breasts into cubes measuring 2 cm × 2 cm and place them in a large bowl. Then peel 2 cloves of garlic and press them into the bowl with the meat. Next, add ground coriander, ground paprika, dried oregano, zest and juice of 1 lemon, salt, and pepper to the bowl and mix everything thoroughly to coat the meat well with the spices. Then prepare 4 skewers, evenly thread the seasoned meat cubes onto them, and place the resulting skewers in the refrigerator for at least 30 minutes.
- 2In the meantime, prepare the tzatziki. Finely chop the mint and dill. Then take a smaller bowl, grate the cucumber into it on a fine grater, salt it, and wait 5–8 minutes for the cucumber to release water due to the salt. Meanwhile, peel 1 clove of garlic, press it into a medium-sized bowl, and add the chopped mint, dill, and plain yogurt. After the specified time, squeeze the excess water from the grated cucumber, add the cucumber to the bowl along with lemon juice and salt, mix the entire contents of the bowl, and place the bowl with tzatziki in the refrigerator for now.
- 3After at least 30 minutes of chilling the chicken skewers, prepare a pan and heat 2 tablespoons of oil in it over medium heat. Then place the chicken skewers in the pan and fry them for 5–6 minutes on each side. Then remove the skewers from the pan.
- 4Divide the fried skewers onto 4 plates and serve with chilled tzatziki.
