INGREDIENTS
- 120 g whole grain spelt flour
- 80 g brown sugar
- 90 g butter (softened)
- 20 unsalted, unroasted, peeled pistachios (can be substituted with peeled almonds)

INSTRUCTIONS
- 1In a large bowl, combine spelt flour, brown sugar, and softened butter to make a dough. Then place the bowl in the refrigerator for 30 minutes.
- 2After the specified time, preheat the oven to 160 °C and line a baking sheet with parchment paper. Then take the rested dough out of the refrigerator and shape it into 20 equally sized balls, placing them on the lined baking sheet. Gently flatten each ball with your palm to a thickness of about 1 cm and press 1 pistachio into the center of each.
- 3Transfer the baking sheet to the preheated oven and bake for 10–15 minutes at 155–160 °C.
- 4Remove the finished cookies from the oven and let them cool on the baking sheet for 10 minutes. Then they are ready to serve.
