INGREDIENTS
- 300 g cooked pasta (leftover spaghetti, penne, or other favorite pasta)
- 4 eggs
- 100 g grated Parmesan (or other hard cheese)
- 100 g mozzarella (cut into cubes)
- 100 g ham, bacon, or salami (optional)
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- Salt
- Pepper
INSTRUCTIONS
- 1If you are using leftover pasta, just bring it to room temperature. If you are preparing fresh pasta, cook it according to the package instructions and let it cool.
- 2In a bowl, beat the eggs with grated Parmesan. Add chopped mozzarella, ham (if using), and chopped onion. Add the cooked pasta to the egg mixture and mix well to combine all the ingredients. Salt and pepper to taste.
- 3Heat olive oil in a medium-sized pan over medium heat. Pour the pasta and egg mixture into the pan and spread it evenly. Fry the frittata over medium heat for 5-7 minutes until the bottom is golden and the top begins to set.
- 4If the pan is oven-safe, you can finish the frittata under the grill until the top is golden. If the pan is not oven-safe, place a plate on the frittata, carefully flip the pan, and return the frittata to the pan to finish cooking on the other side (another 3-5 minutes).

You can use different types of leftover pasta and combine them with various types of cheese, vegetables, or meat depending on what you have on hand.
