INGREDIENTS
- 3 medium-sized sweet potatoes (about 750 g)
- 2 tablespoons olive oil
- 1 onion (finely chopped)
- 3 cloves of garlic (finely chopped)
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 900 ml vegetable broth
- 250 ml cooking cream
- Salt
- Pepper
- 3 tablespoons sour cream
- 3 tablespoons sunflower seeds
- 100 g smoked salmon
- Fresh coriander or chives for garnish
INSTRUCTIONS
- 1Peel the sweet potatoes and cut them into smaller cubes.
- 2Heat olive oil in a pot and add chopped onion. Sauté over medium heat until softened, about 5 minutes.
- 3Then add garlic and sauté for another 2 minutes.
- 4Add smoked paprika, ground cumin, cinnamon, and cloves. Let the spices sauté briefly to release their aroma.
- 5Next, add the chopped sweet potatoes and mix well to coat them in the spices.
- 6Pour in the vegetable broth and bring to a boil. Let it cook for about 20 minutes until the sweet potatoes are tender.
- 7Remove the soup from heat and let it cool slightly.
- 8Blend the soup until smooth with an immersion blender. Add cooking cream and season with salt and pepper.
- 9Pour the cream into bowls. For each serving, add a spoonful of sour cream, a piece of smoked salmon, sprinkle with sunflower seeds, and optionally fresh coriander or chives.
