INGREDIENTS

  • 3 medium-sized sweet potatoes (about 750 g)
  • 2 tablespoons olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 900 ml vegetable broth
  • 250 ml cooking cream
  • Salt
  • Pepper
  • 3 tablespoons sour cream
  • 3 tablespoons sunflower seeds
  • 100 g smoked salmon
  • Fresh coriander or chives for garnish

INSTRUCTIONS

    Peel the sweet potatoes and cut them into smaller cubes.

    Heat olive oil in a pot and add chopped onion. Sauté over medium heat until softened, about 5 minutes.

    Then add garlic and sauté for another 2 minutes.

    Add smoked paprika, ground cumin, cinnamon, and cloves. Let the spices sauté briefly to release their aroma.

    Next, add the chopped sweet potatoes and mix well to coat them in the spices.

    Pour in the vegetable broth and bring to a boil. Let it cook for about 20 minutes until the sweet potatoes are tender.

    Remove the soup from heat and let it cool slightly.

    Blend the soup until smooth with an immersion blender. Add cooking cream and season with salt and pepper.

    Pour the cream into bowls. For each serving, add a spoonful of sour cream, a piece of smoked salmon, sprinkle with sunflower seeds, and optionally fresh coriander or chives.
