INGREDIENTS

  • about 700 g turkey breast fillets
  • 200 g American smoked bacon
  • 200 g crème fraîche
  • 1 small young leek
  • 1 tablespoon dried sage
  • 10 leaves fresh sage
  • 2 dcl milk
  • 8 small sweet potatoes
  • Olive oil
  • 1 lime
  • Chili flakes
  • A pinch of cinnamon
  • Salt
  • Freshly ground white pepper
  • Head of garlic

INSTRUCTIONS

    Wash the meat, salt, and pepper it.
  • 2
    Prepare 8 smaller slices, roll them up, and wrap them in bacon. Sear them quickly in a hot pan.

    In a baking dish, mix crème fraîche with milk. Add chopped leek, dried sage, salt, and pepper.

    Place the meat into the mixture and top with fresh sage. Bake in the oven at 180 degrees for about 20 minutes.

    Meanwhile, prepare the sweet potatoes. Cut them into thicker slices or halves, and score them (but do not cut through).

    Place the sweet potatoes on a baking sheet lined with parchment paper, drizzle with olive oil. Salt, pepper, and sprinkle with a pinch of cinnamon. Also sprinkle with chili and drizzle with lime juice.

    Cut the top off a head of garlic, drizzle with olive oil, and place it with the sweet potatoes. Bake together with the meat.
