INGREDIENTS
- about 700 g turkey breast fillets
- 200 g American smoked bacon
- 200 g crème fraîche
- 1 small young leek
- 1 tablespoon dried sage
- 10 leaves fresh sage
- 2 dcl milk
- 8 small sweet potatoes
- Olive oil
- 1 lime
- Chili flakes
- A pinch of cinnamon
- Salt
- Freshly ground white pepper
- Head of garlic

INSTRUCTIONS
- 1Wash the meat, salt, and pepper it.
- 2Prepare 8 smaller slices, roll them up, and wrap them in bacon. Sear them quickly in a hot pan.
- 3In a baking dish, mix crème fraîche with milk. Add chopped leek, dried sage, salt, and pepper.
- 4Place the meat into the mixture and top with fresh sage. Bake in the oven at 180 degrees for about 20 minutes.
- 5Meanwhile, prepare the sweet potatoes. Cut them into thicker slices or halves, and score them (but do not cut through).
- 6Place the sweet potatoes on a baking sheet lined with parchment paper, drizzle with olive oil. Salt, pepper, and sprinkle with a pinch of cinnamon. Also sprinkle with chili and drizzle with lime juice.
- 7Cut the top off a head of garlic, drizzle with olive oil, and place it with the sweet potatoes. Bake together with the meat.
