INGREDIENTS FOR THE SALAD
- 2 eggs
- 50 g English bacon
- 1 chicken breast
- 1 romaine lettuce
- 150 g tomatoes
- 1 shallot
- 1 small avocado or half of a larger one
- 50 g blue cheese
INGREDIENTS FOR THE DRESSING
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Freshly ground pepper
- Salt
INSTRUCTIONS
- 1Place the eggs in water, bring to a boil, and cook for 6-8 minutes. Then place the eggs in cold water, let them cool, and peel.
- 2Cut the bacon into small cubes and fry in a pan until golden. Remove it from the pan, leave the rendered fat, and fry the chicken breast in it, seasoning with salt. Cook the breast on all sides over medium heat until fully cooked. Then let it rest for a few minutes and cut into pieces.
- 3For the dressing, mix the listed ingredients and season with salt and ground pepper.
- 4Wash the romaine lettuce and cut into strips, cut the tomatoes into smaller pieces, and the shallot into strips, pour over the dressing and mix. Remove the skin and pit from the avocado and cut into thicker strips or cubes.
- 5Place the salad, halved eggs, pieces of chicken, avocado, and bacon in a bowl. Sprinkle with pieces of blue cheese and serve.
