INGREDIENTS

  • 35 g dried mushrooms (porcini or mixed mushrooms)
  • 3 potatoes
  • 300 g paprika sausage
  • 1 onion
  • 2 cloves of garlic
  • 250 ml whipping cream
  • 250 ml whole milk
  • 2 tablespoons plain flour
  • 2 teaspoons sweet ground paprika
  • 3 bay leaves
  • wine vinegar
  • vegetable oil
  • butter
  • salt
  • pepper

INSTRUCTIONS

    Place the dried mushrooms in a bowl, pour approximately 300 ml of water over them, and let them soak overnight.

    Put 2 tablespoons of butter in a pot and let it foam. Add finely chopped onion and sauté until translucent.

    Add chopped sausage, mushrooms with their soaking liquid, and approximately 1 liter of water to the pot. Add bay leaves, finely chopped garlic, salt, pepper, and let it cook for 20 - 30 minutes.

    Peel the potatoes and cut them into small cubes. Add them to the pot and cook until tender.

    In a bowl, mix the cream with milk and pour it into the pot. Bring to a boil and cook for another 10 minutes.

    In a small saucepan, put 1 tablespoon of oil, plain flour, and sweet paprika. Place the saucepan on the stove and stir the flour constantly for 1 minute. Then take a ladle of soup and add it to the flour. Mix well to avoid lumps and return it to the boiling soup. Stir and cook for another 2 minutes. Then remove the pot from the heat. Finally, season with vinegar and salt if necessary.
