INGREDIENTS
- 2 salmon fillets with skin
- Olive oil
- Fresh herbs (thyme, sage, rosemary, …)
- 50 g butter
- 2 garlic cloves
- Salt
INSTRUCTIONS
- 1Add 1 tablespoon of oil to the pan and let it heat up over medium heat.
- 2Pat the salmon fillets dry with kitchen towels and salt them on the side without skin.
- 3Prepare two pieces of baking paper (1 for each fillet). Spread 1 teaspoon of oil on each and place the fillets on the papers skin-side down. Transfer them to the heated pan with the paper. Let them cook for about 3 minutes. During the first 10 seconds, press the fillet down with your fingers to ensure the skin contracts and cooks evenly.
- 4When the skin is golden, turn the salmon skin-side up. Add butter, herbs, and crushed garlic cloves to the pan. When the butter starts to foam, baste the fillets with it for another 2-3 minutes.
- 5Then carefully remove the salmon and let it rest on a rack for 5 minutes.
