INGREDIENTS

  • 2 salmon fillets with skin
  • Olive oil
  • Fresh herbs (thyme, sage, rosemary, …)
  • 50 g butter
  • 2 garlic cloves
  • Salt

    Add 1 tablespoon of oil to the pan and let it heat up over medium heat.

    Pat the salmon fillets dry with kitchen towels and salt them on the side without skin.

    Prepare two pieces of baking paper (1 for each fillet). Spread 1 teaspoon of oil on each and place the fillets on the papers skin-side down. Transfer them to the heated pan with the paper. Let them cook for about 3 minutes. During the first 10 seconds, press the fillet down with your fingers to ensure the skin contracts and cooks evenly.

    When the skin is golden, turn the salmon skin-side up. Add butter, herbs, and crushed garlic cloves to the pan. When the butter starts to foam, baste the fillets with it for another 2-3 minutes.

    Then carefully remove the salmon and let it rest on a rack for 5 minutes.
