INGREDIENTS FOR THE BATTER

  • 200 g whole grain spelt flour
  • 1 ripe banana (peeled, approx. 80 g after peeling)
  • 2 tablespoons brown cane sugar
  • 1 teaspoon baking powder
  • 2 medium-sized eggs
  • 240 ml skimmed cow's milk

INGREDIENTS FOR THE FILLING

  • 200 g fresh strawberries
  • 1 handful fresh mint
  • 2 tablespoons liquid honey

INSTRUCTIONS

    First, prepare the filling. Cut the strawberries into small cubes, chop the mint coarsely, and place both in a bowl with 2 tablespoons of honey. Mix and chill in the refrigerator.

    Place all the ingredients for the batter into a tall container and blend with an immersion blender until smooth. If the batter is too thick, add 50–100 ml of water as needed.

    Next, heat a larger non-stick pan (⌀ 22 cm). Pour the prepared batter onto the pan in portions and cook for 1–2 minutes on each side. The batter will make approximately 6 pancakes.

    Fill the cooked pancakes with the chilled strawberry mixture and serve.
