INGREDIENTS

  • 8 slices of quality toast bread (preferably sourdough)
  • 2 tablespoons of full-fat cream
  • 2 tablespoons of soft butter
  • 2 tablespoons of mustard
  • 2 tablespoons of honey
  • 1 teaspoon of olive oil
  • 100 g of raclette cheese
  • 4 sun-dried tomatoes in oil (cut into pieces)
  • 1 ripe but firm pear (cut into thin slices)
  • Freshly ground pepper
  • A handful of walnuts
  • 1 teaspoon of cane sugar
  • 30 g of pea microgreens

INSTRUCTIONS

    First, mix the cream, butter, mustard, and honey into a smooth spread. Spread the mixture on the toast bread and place pieces of raclette on each slice. Preheat the oven to 220 degrees. Place the toast bread on a baking sheet lined with parchment paper and bake for about 10 minutes until the bread is crispy and the cheese is melted.

    Mix the pear slices with 1 tablespoon of honey and olive oil. Grill on a dry pan for 1 minute on each side until golden. Set them aside. Add brown sugar and a little water to the same pan and let it dissolve into caramel. Add the nuts and roast until crispy.

    On each baked toast, place microgreens, a sun-dried tomato, grilled pear, and caramelized nut. Season with pepper.
