INGREDIENTS

  • 200 g chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon gingerbread spice
  • 1 teaspoon ginger (finely grated)
  • 200 g whole wheat spaghetti (dry)
  • 100 ml chicken broth
  • 100 g small white mushrooms (sliced thickly)
  • 50 g fresh green beans (or frozen)
  • 1 tablespoon soy sauce
  • A pinch of chili flakes
  • Salt
  • Pepper

INSTRUCTIONS

  • 1
First, prepare the meat and marinade. Clean the chicken meat, cut it into thin strips, and place it in a small bowl. Add olive oil, gingerbread spice, salt, pepper, and grated ginger. Mix and let marinate for at least 30 minutes in the refrigerator.
  • 2
After the time has passed, remove the bowl from the refrigerator. Heat a large non-stick pan over medium heat and bring water with salt to a boil in a large pot for the spaghetti. Once the water in the pot starts boiling, add the spaghetti and cook for about 12 minutes or according to the instructions on the package.
  • 3
Meanwhile, add the marinated chicken to the heated pan and fry for 1–2 minutes over medium heat. Pour in 100 ml of chicken broth and cook over medium heat for about 6 minutes.
  • 4
Then add the sliced mushrooms to the pan and cook over medium heat until the water almost evaporates, which will take about 5 minutes. Finally, add the green beans and soy sauce, and season the mixture with salt, pepper, and chili flakes.
  • 5
Drain the cooked spaghetti, mix it with the chicken mixture, and heat in the pan for approximately 1 minute over medium heat. Divide the finished chicken chow mein into 3 servings and serve.

TIP

  • 1
The longer you marinate the meat, the more flavor it will absorb from the spices and ginger. So don't hesitate to marinate the meat a day in advance.
